Made Aubrey’s mug pancakes again! Well actually this was the 10th time already or something hahaha, they’re so delicious! I make them a little bit different now, just with oatmeal, banana, Greek yoghurt, soy milk and cinnamon (and honey as topping), I just like the taste even more this way! Quick/simple vegan lunch idea ππΏ - base of spinach: layer with @traderjoeslist microwaveable organic brown rice pack (life saver), fresh chopped veggies (I used tomatoes, cucumbers, and carrots), roasted chickpeas (bake for 30 minutes at 350 degrees), hummus + spices/herbs of your choice (I used sea salt and cilantro).
