Made Aubrey’s mug pancakes again! Well actually this was the 10th time already or something hahaha, they’re so delicious! I make them a little bit different now, just with oatmeal, banana, Greek yoghurt, soy milk and cinnamon (and honey as topping), I just like the taste even more this way! :) vegan cheese and avocado grilled sandwiches
Quick/simple vegan lunch idea ๐๐ฟ - base of spinach: layer with @traderjoeslist microwaveable organic brown rice pack (life saver), fresh chopped veggies (I used tomatoes, cucumbers, and carrots), roasted chickpeas (bake for 30 minutes at 350 degrees), hummus + spices/herbs of your choice (I used sea salt and cilantro). Done ๐๐ผ✨

Why you should use seasoning and spices :
1) It makes your recipes taste amazing. Look at the picture ; it’s rice, zucchini, carrots, broccolis, mushrooms, onions, garlic. I added ginger (good for your digestion and health in general + enhance the flavor of anything) to the veggies, and I used 1teaspoon of curcuma (which is a powerful antioxidant) and some oregano in the rice.
2) It makes cooking less boring & it colors your plates.
3) It adds micronutrients to your diet. As I said, curcuma is pretty amazing.
4) You can make a bunch of recipes with a low budget (hello fellow students) without feeling deprived of any kind of food nor bored by noodles.
5) The health property contained in most of spices will help you to prevent all kind of diseases and fight cancer.
This morning (3pm totally counts as morning on Sundays ๐) I decided to treat myself to some healthy carbs after gym! This is relatively calorific just because I used two bananas. You may eliminate them from the recipe, it shouldn’t affect the consistency much but you may want to add some extra sweetener into your batter. Fancy a dip for those yummy pancakes? I would suggest mixing greek yoghurt with cinnamon-this makes an excellent, fresh and high protein dip. If you eliminate bananas from the recipe, you may add greek yoghurt into the batter to keep the pancakes moist ๐.
So here’s my protein pancake recipe:
You will need:
1. ½ cup of oat flour
2. 2 free range eggs (1 whole, 1 egg white) ๐
3. 2 organic fair-trade bananas ๐
4. Semi-skimmed milk ๐ผ
5. 1 scoop of whey protein powder ( I used Gold Standard peanut butter flavour)
6. Dark chocolate ( I used 80%)
7. Berries galore ๐
8. Coconut oilDirections:
Literally this is the easiest recipe ever!
In one bowl, mix the dry ingredients. Mix the eggs, 1 mashed banana, milk and a tsp. of coconut oil in another bowl. Pour the wet ingredients into the bowl with oat flour and protein, mix until smooth (relatively smooth as there will be some lumps of banana present). Add chopped chocolate and voila.Pre-heat a small pan with a tsp. of coconut oil and then lower the heat. Pour your pancake batter according to how big you want your pancakes.
To top everything off, I decided to grill the remaining banana with a pinch of nutmeg under a grill to make it sweet and mushy! ๐๐ป๐๐ป Then I used that goodness as well as blackberries and blueberries as toppings… mmmmm yummy ๐ ๐ฝ
How to Cook Grains
Grains make a healthy option, may it be lower risk of heart disease, diabetes, certain cancers or better health.
Cooking most grains is almost similar to cooking rice.

Crispy, Juicy Chicken Thighs – Meal Prep
A quick recipe for your meal prep needs
Ingredients
Boneless, skinless chicken thighs
Seasoning blend – 1 tsp of each: kosher salt, black pepper, lemon granules, dried oregano, granulated onion, granulated garlic, smoked paprika, and ancho chili powder
Freshly minced parsley or cilantro
Olive oil
Lemon juice
Directions
Using the seasoning blend, fresh herbs, and lemon juice, and olive oil, create a marinade for the chicken thighs and let marinate for about 2 hours in the fridge, removing 30 minutes prior to grilling.
Preheat your oven to 375 degrees Fahrenheit and heat a cast iron pan over medium high heat.
Sear the chicken thighs on each side to develop a crispy skin and finish in the oven until the internal temperature reaches 165 degrees Fahrenheit.
Slice and portion for meal prep.
Enjoy!

Grilled Asparagus Rafts
Yield: 4 servings (serving size: 1 asparagus raft)
Ingredients
- 16 thick asparagus spears (about 1 pound)
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon dark sesame oil
- 1 garlic clove, minced
- 2 teaspoons sesame seeds, toasted
- ¼ teaspoon black pepper
- Dash of salt
Preparation
- Prepare grill to high heat.
- Snap off tough ends of asparagus. Arrange 4 asparagus spears on a flat surface. Thread 2 (3-inch) skewers or toothpicks horizontally through spears 1 inch from each end to form a raft. Repeat procedure with remaining asparagus spears.
- Combine soy sauce, oil, and garlic; brush evenly over asparagus rafts. Grill 3 minutes on each side or until crisp-tender. Sprinkle evenly with sesame seeds, pepper, and salt.

Ingredients
- Cooking spray
- 1 cup chopped broccoli
- 2 large eggs, beaten
- 2 tablespoons feta cheese, crumbled
- ¼ teaspoon dried dill
- 2 slices rye bread, toasted
Preparation
1. Heat a nonstick skillet over medium heat. Coat pan with cooking spray. Add broccoli, and cook 3 minutes.
2. Combine egg, feta, and dill in a small bowl. Add egg mixture to pan. Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast.
